    I thought I’d pass on my own recipe for curried courgette. I invented it myself and served it cold at a summer lunch and got lots of compliments.

    Curried courgettes – a great way to use an excess of courgettes
    2 large onions
    2 tspns turmeric
    3 tablespoons brown sugar
    2 tspns cumin
    1 tspn cinnamon
    ¼ cup cider vinegar
    A splash of balsamic vinegar
    2 tspns aniseed
    1 tspn whole cloves
    ½ tspn cardamom
    Grated rind of 1 lemon
    Handful of raisins
    Salt to taste
    Simmer this all together.
    ADD:
    2kg courgettes nicely sliced
    Cook until the liquid has evaporated and the courgettes are just soft..

    PS because the courgettes are very watery you do need to reduce it or cook them separately and get rid of some of the watery liquid!
